{"id":9728,"date":"2015-10-01T07:30:21","date_gmt":"2015-10-01T11:30:21","guid":{"rendered":"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/?p=9728"},"modified":"2015-09-26T15:28:38","modified_gmt":"2015-09-26T19:28:38","slug":"the-art-of-plating-food","status":"publish","type":"post","link":"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/2015\/10\/the-art-of-plating-food\/","title":{"rendered":"The Art of Plating Food"},"content":{"rendered":"<p style=\"text-align: center;\">If you&#8217;re a world renown chef, you&#8217;re used to plating (arranging food in a pleasing manner); although, what is your creative process for arranging such an artistic plate?<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/09\/scallops-plated.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-9729\" src=\"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/09\/scallops-plated.jpg\" alt=\"scallops-plated\" width=\"480\" height=\"360\" srcset=\"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/09\/scallops-plated.jpg 480w, https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/09\/scallops-plated-300x225.jpg 300w, https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/09\/scallops-plated-400x300.jpg 400w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/a>There is an art to plating food.<\/p>\n<p style=\"text-align: center;\"><a class=\"yt-uix-sessionlink g-hovercard spf-link \" href=\"https:\/\/www.youtube.com\/channel\/UCdTLhjAGVI_XDAuXrobtI6Q\" data-sessionlink=\"itct=CDAQ4TkiEwjE9qStjJHIAhWKNKoKHV5eB4so-B0\" data-ytid=\"UCdTLhjAGVI_XDAuXrobtI6Q\">Helen Rennie<\/a>&#8216;s Youtube channels does a good example of explaining just how it is done.<\/p>\n<p style=\"text-align: center;\"><iframe src=\"https:\/\/www.youtube.com\/embed\/lp1IJiBO408\" width=\"480\" height=\"270\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<p style=\"text-align: center;\">Even more visual is the exhibit, <a href=\"http:\/\/new.artsmia.org\/ferran-adria-notes-on-creativity\/\">Ferran Adri\u00e0: Notes on Creativity<\/a>. detailing chef Ferran Adria&#8217;s plating process starting from when he was the chef of el Bulli, now shuttered but it was one of the most famous restaurant in Spain in the 80&#8217;s.<\/p>\n<p style=\"text-align: center;\">I first learned about <a href=\"http:\/\/www.thedailybeast.com\/articles\/2014\/01\/29\/the-genius-behind-elbulli-ferran-adria-reveals-his-creative-process.html\" target=\"_blank\">this exhibit in 2014<\/a> and it&#8217;s taken this long to <a href=\"http:\/\/www.mprnews.org\/story\/2015\/09\/23\/appetites-visual-masterclass-from-a-master-chef\" target=\"_blank\">come to the US<\/a>.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/10\/Ferrans-plating-diagram.png\"><img decoding=\"async\" class=\"aligncenter wp-image-9733 size-full\" src=\"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/10\/Ferrans-plating-diagram.png\" alt=\"Ferran's plating diagram on Art Is Everywhere\" width=\"480\" height=\"368\" srcset=\"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/10\/Ferrans-plating-diagram.png 480w, https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/10\/Ferrans-plating-diagram-300x230.png 300w, https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/10\/Ferrans-plating-diagram-391x300.png 391w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/a>Brett Littman, the exhibition curator, &#8220;has been constructing and deconstructing\u00a0 Ferran&#8217;s visual concepts. In fact, out of this exhibit comes a 2,720-page catalogue raison\u00e9e, <a href=\"http:\/\/www.amazon.com\/elBulli-2005-2011-Ferran-Adri%C3%A0\/dp\/0714865486\" target=\"_blank\"><i>elBulli: 2005-2011<\/i><i>,<\/i><\/a><i> <\/i>that details all the recipes and techniques of the restaurant from its final seven years. This will be a food lovers visual delight.&#8221;<\/p>\n<p style=\"text-align: center;\">In the meantime, it is interesting to see that the exhibit uses plastine models to visually prep-create the food to give a 3-D perspective of what the plated food will look like.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/10\/Plasticine-used-for-the-Art-of-Plating-exhiit_AIE.png\"><img decoding=\"async\" class=\"aligncenter wp-image-9734 size-full\" src=\"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/10\/Plasticine-used-for-the-Art-of-Plating-exhiit_AIE.png\" alt=\"Plasticine used for the Art of Plating exhibit_AIE\" width=\"480\" height=\"357\" srcset=\"https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/10\/Plasticine-used-for-the-Art-of-Plating-exhiit_AIE.png 480w, https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/10\/Plasticine-used-for-the-Art-of-Plating-exhiit_AIE-300x223.png 300w, https:\/\/www.ashley-spencer.com\/ArtIsEverywhere\/wp-content\/uploads\/2015\/10\/Plasticine-used-for-the-Art-of-Plating-exhiit_AIE-403x300.png 403w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/a>I can relate to Helen Rennie&#8217;s approach and philosophy, &#8220;it&#8217;s all fluff&#8221; but have fun with it. Plating certainly makes preparing any meal more fun. In some ways it is similar to me needed a Facebook page for my business, it is expected for chefs these days to have a pleasing food presentation.
